Baked stuffed apples

Stuffing
1 cup oats
1/4 cup safflower oil
1/4 cup maple syrup
1/3 cup currants
1/2 cup chopped walnuts
1/2 tsp cinnamon
1/4 tsp nutmeg
pinch salt
Whisk all ingredients together.

1 apple per serving
Core each apple, leaving a base at the bottom of each apple.
Stuff each apple fully, pressing the stuffing firmly into the apple.

In baking dish, place the stuffed apples
Add, along side the apples:
1 cinnamon stick
3 allspice berries
4 green cardamom pods
1 vanilla bean, split
2 cloves


in sauce pan, bring to boil
1 cup chardonnay
1 cup apple cider

add this to the baking dish, being careful not to pour over the apples. Cover tightly

Bake at 350 for 40 minutes. Serve warm with ice "Cream". Suggested flavors: Spiced pumpkin, vanilla, rosewater saffron.

  1. this sounds so very delicious, the stuffing is perfect. are the oats pre-cooked? what kind of maple syrup do you use? i love the use of currants, so much more wonderful than raisins...

  2. I use grade B maple. Oats are not precooked. I also like currants but sometimes prepare this with dried cranberries.
