fried yucca cakes

yeah, fried starch!

1 medium sized yucca, peeled and grated
4 inch piece, yama -imo grated
1 small leek, chopped
1 tsp sea salt
1/2 tsp crushed black pepper


Combine all ingredients well.
Heat up some olive oil in a cast iron skillet and fry on both sides till golden brown

  1. Sounds great. Can a regular white sweet potato be substituted for the yama-imo? Some of our local Oriental markets might carry them, but I can't recall ever seeing any.

  2. yama-imo, when grated, comes to a consistency that will remind you of beaten egg white. And it works in a similar fashion, binding the other elements together. I use it often for this in my burger and various other recipes. So, in other words, sweet potato could replace the yucca but not the yama-imo in this recipe. Look for it in Japanese markets
