Another basic, easy recipe that produces amazing results.
dry mix
1 cup oats
1 cup pastry flour
1/2 tsp sea salt
1 tsp cinnamon
1 tsp baking powder
wet mix
1/2 cup safflower oil
1/2 cup agave syrup
1 tsp vanilla
1 cup grated carrots
1/2 cup chopped walnuts
1/2 cup raisins
In separate bowls, mix the dry ingredients in one and wet ingredients in another. Add wet to dry and then add the carrots, nuts and raisins
For small, teaspoon size cookies on a baking tray. Bake at 350 for 10 minutes. Remove and place on cooling rack.
this looks like a great recipe! i appreciate the fact that they don't have cane sugar in them and are healthy. by pastry flour do you mean whole wheat pastry flour? are the cookies soft? thanks so much!

ReplyDeleteYes, whole wheat pastry flour but it is often simply called pastry flour. They are soft, chewy and very tasty. They do not taste like flour, which is a problem i have with most vegan cookies. Baking is NOT my specialty by any means and my repetoire is limited
